Résumé :
Predictive microbiology focuses on indicating the possible variations that occur among populations of micro-organisms as a result of the environmental factors to which they are exposed. Thus, based on the observations already analysed, it is possible to predict the behaviour of micro-organisms in a given environment. In this sense, the use of this tool can be a strategy used for the prevention of microbiological hazards, allowing the adoption of effective corrective measures to be used in areas relevant to food quality and safety....
Biographie:
Nutritionist and Tourismologist (UFPel 2009 and 2010). Master in Nutrition and Food in the area of Food Analysis and Quality Control (UFPel, 2013). Specialist in Food Science (UFPel, 2016). PhD student in Food Science and Technology in the area of Food Quality and Safety (UFV, 2018).
